Fresh Handmade Tagliolini
Delicate, fine-cut Piedmontese egg ribbons crafted on a raw wooden board: paper-thin sfoglia, dense 1.5–2 mm knife cuts, and airy cascading nests.
Everything You Need
The classic golden ratio: 100g Tipo '00' flour, 1 large egg (or 6 rich yolks), and a pinch of salt per serving.
Flour Fountain & Whisking Yolks
Pour 100g of Tipo '00' flour onto the wooden board and build a wide circular crater with firm walls. Add 1 pinch fine sea salt. Crack in 1 large egg (or 6 yolks) and beat gently with a fork, drawing flour inward from the perimeter until a thick custard forms.
Deep Golden Color
Use pasture-raised eggs with vibrant orange-yellow yolks (pasta gialla). They provide natural elasticity and the iconic sun-drenched hue of Tuscan pappardelle.
Hand-Kneading & Ball Shaping (Pirlatura)
Bring the dough together and knead with the heel of your hands for 8 to 10 minutes. Push firmly across the raw wood, fold back, and rotate. Tuck the edges underneath to form a tensioned, silky-smooth ball (pirlatura). Wrap tightly in cling film and rest for 30 minutes.
Why Dough Must Rest
Resting allows moisture to hydrate every starch granule and relaxes the gluten network so the sheet can be rolled without snapping back.
Flattening & Mattarello Rolling
Flatten the dough into a disk, then roll out with a long wooden mattarello from the center outward. Rotate frequently to maintain an even round sfoglia with uniform thickness of about 1 mm across the board.
Porous Wood Texture
The unvarnished wood of the board and mattarello imparts micro-roughness to the pasta surface, ensuring rich ragù clings to every ribbon.
Windowpane Transparency Test
Gently lift the thin sfoglia with both hands and hold it up toward the light. The sheet should be translucent enough that you can clearly see the silhouette of your hand through the golden dough, yet sturdy enough to support hearty ragù.
Semolina Dusting & Rolling Cylinder
Dust the entire sfoglia with semolina rimacinata and smooth gently with your palms. Gently fold or roll the sheet from both sides toward the center into a flat, loose cylinder without pressing down on the layers.
Loose Folds Mean Easy Unfurling
Never press down on the folded roll. If the layers stick together under pressure, the ribbons will tear when unfurling.
Precision Fine Cuts (1.5-2 mm) & Cascading Nests
With an ultra-sharp knife, slice rapid, razor-thin ribbons only 1.5 to 2 mm in width without pressing down. Slide the spine of your knife beneath the cuts, lift high into the air and shake gently to let hundreds of golden strands cascade effortlessly into airy pasta nests.
