Ravioli Pasta Dough
The ideal balance of 75% '00' flour and 25% semolina rimacinata with farm eggs (or rich yolks) for resilient, leak-proof stuffed pasta
The 75/25 Stuffed Pasta Ratio
75% '00' flour for silky stretch and 25% semolina rimacinata for structure, paired with farm eggs or rich yolks.
The Dual-Flour Volcano & Eggs
Combine 75g '00' flour and 25g semolina rimacinata directly on your wooden board. Sculpt a wide well with stable walls, add 1 large (or 6 yolks) fresh whole egg (or 6 golden yolks), and gently whisk with a fork.
Semolina Strength & Egg Options
25% semolina rimacinata gives ravioli sheets sturdy resistance so they do not burst during boiling. 75% '00' flour provides elasticity. Using 1 whole egg yields a balanced dough, while swapping for 6 egg yolks creates an ultra-velvety, golden dough.
Bench Scraper Folding & Chopping
Once the egg absorbs flour from the inner crater, take a metal bench scraper. Scoop loose flour from the borders inward and rhythmically chop into the wet mass until a coarse, hydrated crumb forms.
Stainless Steel Scraper
The steel bench scraper integrates moisture and semolina grains rapidly without sticking to your fingers or overheating the dough.
Compacting Crumbs Against Wood
Set the scraper aside and gather the golden crumbles between your hands. Use downward body pressure with the heel of your palms to fuse every dry crumb into a firm, cohesive mound.
Natural Board Grip
Unvarnished wood breathes, absorbs ambient dough humidity, and provides the microscopic grip needed to fuse coarse semolina and delicate '00' flour seamlessly.
Vigorous Kneading to a Silky Ball
Knead vigorously for 8–10 minutes: push forward with the heels of both hands, fold over, rotate a quarter turn, and repeat until the dough ball becomes completely smooth, matte, and resilient.
The Finger Dent Test
Press your thumb gently into the center of the dough ball. If the indentation bounces back within a few seconds, the gluten network is perfectly developed.
Cling Film Wrap & 30-Minute Rest
Wrap the dough tightly in plastic wrap to prevent skinning and let it rest at room temperature for at least 30 minutes. Resting allows gluten to unwind and semolina grains to fully hydrate before rolling.
Patience for Thin Sfoglia
Never roll out unrested dough: it will snap back like rubber and resist sealing. A 30-minute rest makes it buttery-soft and ready for rolling ultra-thin ravioli sheets.
